Breakfast Crostini Courtesy of Rachael Ray

Now that the rain has let up a little and we are finally having summer temperatures in New York, I've been looking for refreshing dishes with little or no cooking involved. This one was actually presented on 30 Minute Meals as part of a breakfast menu. But I served it for lunch the other day with a glass of pinot grigio and we loved it. So refreshing with the fresh parsley and basil. I brushed the bread with a little olive oil before browning it for extra flavor.


I found the pints of assorted heirloom baby tomatoes at my market (this isn't the one...I copied this from the Burpee website to show all the different kinds). Aren't they beautiful? The package included a variety of red, orange and yellow tomatoes and a couple of those weird looking ones that are black and green but taste heavenly. I think they're called Black Krim. I saw a comment on another blog that described them as looking like a diseased eggplant. That's actually a pretty good description but don't let that keep you from trying them. They're delicious. It seems when it comes to heirloom, the uglier they are the better they taste.
