Chicken Lo Mein and Vegetable Fried Rice

It's been an international week here in the cottage kitchen...Italian one night, Indian another. And tonight we had Chinese. You don't really need a wok to cook Chinese...a large skillet works just fine. And a good non-stick one works great for the fried rice.

Lo Mein has always been one of my favorites, especially with chicken. The term lo mein actually means "stirred noodles", while chow mein means "fried noodles". I'm not really sure how authentic this recipe is, but it really tastes good. I guess if it has soy sauce, hoisin sauce and ginger, I can consider it Chinese.

One bit of advice, make sure you prep all of your ingredients before you start cooking. It's a little frantic making two stir fry dishes at the same time. I chopped all the vegetables and measured all of the other other ingredients and put them in separate bowls according to how they are to be added. So when it was time to add them I just had to dump the bowl into the pan.
